Over the past week, dynamic teams visited more than 75 kitchens in Gurugram, Noida, and South Delhi, leading to temporary closures and severe improvement notices. Many popular internet brands were found running operations from high-density basements lacking proper waste management structures.
The FSSAI statement highlights that 'digital transparency' is now non-negotiable. Digital record-keeping of procurement, temperature monitoring logs, and kitchen sanitation audits will become mandatory for licensing renewal starting next month. Operators must adapt quickly to meet these modern standards.
Restaurant associations suggest that cloud kitchen brands will need to invest in smart kitchen display monitors and digital logging tools to automate compliance data without slowing down cooking workflows.
